bueno es un poco difícil lograr efectos especiales en un blog escrito, pero
Ustedes se hacen la idea.
Lo prometido es deuda, asi
que aquí les traemos la receta de los famosos cachitos de jamón venezolanos.
El cachito de jamón es ese
pancito que hace muchos años tenia forma de medialuna, de ahí el nombre de
cachito, ahora son generalmente derechitos, rellenos de jamón picadito,
algunas veces con tocineta, y hasta variaciones tales como jamón de pavo y
queso crema, pero no se engañen, el cachito és y siempre será de jamón.
El cachito de jamón, para
los que estan viviendo fuera de Venezuela es una de esas cosas que de verdad
se extrañan, particularmente en Estados Unidos, donde las panaderias per se
no son tan comunes, ya se que en Florida tienen a Don Pan y otras, pero aquí
en el POLO NORTE no son comunes, y lo que encuentras, son pastelerias donde
todo es dulce. Así que el placer de tener un desayuno rápido de un cachito
recién horneado con un juguito de naranja natural, o un cafecito con leche de
máquina de panadería, aquí es simplemente imposible de tener.
Así que con ganas de
comernos un cachito de jamón, lógicamente decidimos que en esta entrega les
daríamos nuestra receta de cachitos de jamón.
Debemos advertir que
nuestra receta es para preparar 32 cachitos, si esta cantidad le parece
exagerada, estas pueden ser algunas de las razones:
a.
Usted
puede no ser venezolano (Sabemos que no es su culpa, solo llame a sus padres
y quéjese amargamente)
b.
Usted
puede estar viviendo actualmente en Venezuela (No voy a empezar…)
c.
No
tiene suficiente familia y amigos para compartir (definitivamente usted
cumple con el punta “a.”, tranquilo la masa congela bien, o invite a los
vecinos)
d.
No
le gustan los cachitos (Ud. es un Caso perdido)
Ahora en serio, la masa si
le parece mucha se puede utilizar en otros tipos de panes rellenos, o no
rellenos, puede probar con queso.
La masa, la puede congelar,
una vez que le
saquen el aire, la meten en una bolsa de plástico, le agregan un chorrito de
aceite, la cierran bien y listo. Cuando la saquen a descongelar, deben tomar
en cuenta que la masa vuelve a crecer otra vez.

Now as we promised, here is the recipe of the Venezuelan famous “Ham
Crescents” (free Translation).
The ham crescent is a little bread that many years ago used to have a
crescent shape, ergo the name, now generally you find them in their
“straight” shape. It is filled with shredded ham, sometimes with a little
bacon, there are some with turkey ham and cream cheese, but don’t let them
fool you, the crescent is and always will be made out of ham. The ham
crescent, for those living outside of Venezuela is one of those things that
you really miss, specially here in the United States, where bakeries as the
ones known in Venezuela, are not so common, yeah I know that in Florida there
is Don Pan and others, but here in the NORTH POLE there are none to be found,
and the only things in the bakeries here, are sweet. So the pleasure of
having a nice quick breakfast of a warm, freshly made ham crescent and
freshly squeeze orange juice, or a coffee with milk, from the bakery machine,
here is just not possible.
Therefore, with the desire to eat a ham crescent, we decided that
this time we were going to publish our recipe for ham crescents, beat that
logic.
As a warning we have to let you know that our recipe is to prepare 32
crescents, if that number seems a little high for you, the reasons may be as
follows:
a. You
may not be Venezuelan (We know is not your fault, just call Mom and Dad and
complain)
b. You
may be actually living in Venezuela (Don’t get me started on this one)
c. You
don’t have enough family and pals (Definitely you fit in point “a.”, don’t
worry the dough can be frozen, or you can invite some neighbors)
d. You
don’t like ham crescents (Just Hopeless)
Now seriously, if you think the dough is a lot, you can use it in
other types of bread filled or not, you may try cheese.
You can Freeze The dough can be frozen, once you take the air out of
it, place it inside a plastic bag with a little oil, and close it tight. When
you take it out to thaw, you should take notice, as the dough will rise once
again.

CACHITOS DE JAMON
INGREDIENTES
Salen 32 cachitos de jamón
· 1 cucharada levadura en polvo
· ½ taza azúcar
· 1 cucharadita sal
· ½ taza mantequilla derretida o aceite
vegetal (NO de oliva)
· 3/4 taza de leche
· 4 1/2-5 tazas de harina todo uso (más
extra para amasar y estirar)
· 2 huevos, ligeramente batidos
· 800 g jamón en lonjas finas, cortado en
tiritas
· 1 huevo batido para pintar (o
mantequilla derretida o leche con azúcar)
· 1-2 cucharadas de papelón rallado
1.Mezclar la levadura con un ¼ taza de
agua caliente, una cucharada de azúcar y una cucharada de harina, dejar
reposar por 10-15 minutos, para activar la levadura. El agua no debe estar hirviendo
porque mata la levadura. La levadura debe activarse, es decir, le sale espuma
y parece que creciera. (si no lo hace busque levadura nueva)
2.En el recipiente grande de la batidora,
agregar la leche con el resto del azúcar, la mantequilla derretida a
temperatura ambiente, la sal y los dos huevos previamente batidos. Mezclar a
velocidad baja, incorporar la levadura una vez que levante, y vaya agregando
la harina poco a poco, revolviendo bien para evitar que queden grumos.
3.Cuando esté incorporada toda la harina,
amasar a velocidad media rápida, 8-10 minutos, hasta que la masa esté suave y
elástica y no se pegue a las paredes del recipiente. De ser necesario se irá agregando
más de harina hasta lograr la consistencia deseada (que no se pegue a los
dedos). La cantidad de harina depende de varios factores: a veces es muy fina
y absorbe más líquido, otras veces los huevos son demasiado grandes y le
añaden más humedad al asunto. Si, por el contrario, notan que la masa está
muy seca, le pueden agregar un poco más de leche.
4.Una vez amasada, poner la masa en un
recipiente grande tapado con un trapo húmedo y dejar reposar en un lugar
tibio, dentro del horno apagado, es ideal. Hay que tomar en cuenta que la
masa duplicara su tamaño, si no tiene un recipiente lo suficientemente
grande, divida la masa en dos y utilize dos recipientes. Esperar dos horas a
que la masa crezca, evite abrir el horno “Pa’ ver si creció” para eso esta la
lucecita que todos los hornos tienen.
5.Cuando crezca la masa, enharinar
ligeramente la superficie de trabajo, poner la masa y sacarle el aire por
completo amasandola con la parte inferior de la mano. Una vez “desinflada”,
cortar en 4 porciones iguales, utilizando para esto un cuchillo afilado. Este
es el momento de congelar la masa si no necesita tantos cachitos.
6.Tomando una porción a la vez. Enharinar el meson de trabajo e ir
estirando con ayuda de un rodillo, hasta hacer un círculo de unos 25-30 cm de
diámetro y 5 mm de espesor (el grosor depende del gusto personal, a menor
espesor, mayor dificultad para enrollar y mayor probabilidad de que se rompa
al hornear). Una vez que esté bien estirada la masa, dividir en 8 porciones
(tipo una pizza). Cada triángulo es un cachito. Usualmente hay que estirar un
poco más cada triangulito por separado, para que el cachito quede de buen
tamaño.
7.Poner el jamón (al gusto) en la base del
triángulo (suponiendo que es un triángulo isósceles) y enrollar hacia el
vértice. Dos trucos para que el jamón no se desparrame: uno, antes de
comenzar a enrollar, doblar los bordes como haciendo un bolsillo alrededor
del jamón y enrollar hasta el final; y dos, al colocar los cachitos sobre la
bandeja (previamente engrasada), poner el piquito hacia abajo.
8.En una bandeja, enmantequillada, colocar
los cachitos, dejar espacio entre cada cachito, unos 3 cm. porque crecen
considerablemente, pintar cada cachito con la mezcla de huevo batido y
papelon rallado disuelto en 1 cucharada de agua tibia, usando una brocha de
repostería (o los dedos, para qué engañarnos, pero no se los chupe todavía),
poner en un sitio tibio y dejar reposar por una hora.
9.Precalentar el horno a 350º F / 175º C
10. Volver a barnizar los cachitos con la
mezcla de huevo y papelón. Así se doran mucho mejor y hornear por 15 minutos
(hasta que se vean doraditos).
11. Trate de dejarlos enfriar ligeramente
antes de introducirlos en su boca, ESTAN CALIENTES.

HAM CRESCENTS
INGREDIENTS
Yield 32 ham crescents
·
1 Tbsp. Dry Yeast
·
½ C. sugar
·
1 tsp. Salt
·
½ C. Melted Butter or vegetable Oil (NOT Olive)
·
3/4
C. Milk
·
4 ½ - 5 C. All Purpose Flour (extra for
kneading)
·
2 Eggs,
slightly beated
·
28 oz Ham shredded or minced
·
1 egg beated to paint
·
1-2 Tbsp. Papelón or piloncillo grated (raw hardened sugar cane pulp) found where they sell Mexican
products if not found use raw cane sugar.
1.Mix the yeast in ¼ cup of
warm water, with 1 tablespoon of sugar and y tablespoon of flour, let it rest
for 10-15 minutes, to activate the yeast. Water should be warm but not hot,
really hot water kills the yeast. Yeast should be activated or awaken, that is
when it appears to foam and grow. (If yeast mix does not bubble get yourself fresher
yeast)
2.In your mixer’s bowl, the
biggest one you have, pour the milk, with the remaining of the sugar, the
melted butter, now at room temperature, the salt and the beated eggs. Mix at
low speed and add the yeast mix, after it grows, then add the flour little by
little, one cup at the time, so your dough doesn’t get lumpy.
3.Once you have added all the
flour, knead the dough at medium – high speed, for about 8 to 10 minutes,
until the dough is soft and elastic, and it does not stick to the wall of the
mixing bowl. If you think is necessary add a little more flour, until you get
the dough to the right consistency. (That is when you can handle it and it
does no stick to your hands). The amount of flour depends of many factors,
sometimes flour is to fine, and it absorbs more liquid, others the eggs are bigger
tan usual, bringing more liquid to the party. On the other hand, if you find
the dough to be dry then adding a one or two tablespoons of milk will solve
the problem.
4.Once the dough is ready you
need to put it to rest, place it inside a bowl covered with a wet towel, and
let it rest in a warm place, a great choice is inside of the oven if it is
turned off. The dough will double its volume, take this in consideration when
choosing the bowl, if you do not have one big enough use two. Let the dough
rest for two hours; avoid opening the oven “Just to check” use the oven light
that is why it’s there.
5.Your dough is ready, now
spread some flour in your working surface, and start kneading with the ball
of your hand, to take all the air out of the dough. Once you extracted all
the air from the dough, cut it in four equal pieces, with a Sharp knife. This
is the moment to freeze the excess dough, if not making 32 Crescents.
6.Take one of the dough
pieces and spread some more flour in the working table and with the help of a
rolling pin, form a circle of about 10 -12 inch diameter and ¼ inch thickness
(the thickness of the rolled dough is up to you, but the thinner the dough,
the harder the rolling and higher the chance of breakage whilst baking). With
the circle of dough already rolled, proceed to cut it in eight pieces, as you
do with a pizza. Every triangle
piece of dough, forms a crescent. Usually you have to roll a little
more every piece so the crescents have a “proper” size.
7.Place the Ham at the
circular base of the triangle and roll the dough towards the vertex. A couple
of tricks, to avoid any spillage of the ham: after putting the ham on place
fold the base angles of the dough over the ham to form a pocket and then roll
the crescent; and when placing the crescents in the baking sheet, place the
vertex part of the crescent facing down.
8.On a greased baking sheet
place the crescents, leave about 1 ½ inches between crescents because they
grow again in the oven, paint every crescent with a mix of egg and raw sugar dissolved
in one tablespoon of warm water, using a brush (or your fingers, if there is
no brush, but don’t lick them just yet), place the sheet in a warm place and
let them rest for another hour.
9.Preheat the oven at 350º F
/ 175º C
10.Varnish the crescents
again with the egg/raw sugar mixture. That way they turn golden better, bake
them for 15 minutes (until golden brown).
11.Try to let them cool down
a little before putting them in your mouth, THEY ARE HOT.
