El fin de
semana pasado, fue el final oficial del verano, toda la gente aquí en
Minnesota se volcó a los parques, piscinas y playas, si, playas ¿sabia Ud que
Minnesota tiene mas costas que California, Hawai y Florida todos juntos?, ¿Y que hay un bote por cada 6
habitantes?
Bueno ya son
suficientes datos inútiles por hoy.
Hoy el clima
estuvo excelente, unos 10° Centígrados, y además estaba soleado, las hojas
están volviéndose amarillas, naranjas y rojas y los niños, ya están llevando
sus chaquetas al colegio, se ven los últimos veleristas en el lago Calhoun,
ignorando que ya el verano termino aforrándose al hecho que el viento sopla y
el sol brilla, equipados unos con chaquetas y otros solo con rompevientos,
evitando las salpicaduras, y burlándose de aquellos que ya colocaron sus
veleros en las plataformas para el hielo por venir.
El verano a
muerto, que viva el otoño.
El otono viene
con su propias reglas y sus comidas, adios a las parrillitas afuera,
bienvenidos los estofados y horneados.
Mmmm cosas
horneadas, esas son las especialidades de Ana Maria.

calentar la casa, algo que haga juego con el color de las hojas, algo RICO

- No, no cachitos pero con el papelón que
tenemos podemos hacer GOLFEADOS
Los golfeados
son unos pancitos enrollados en forma de caracol, que sin duda, se han
convertido en uno de los dulces mas apreciados por los venezolanos. Se
encuentran en cualquier panadería del país, pero los más famosos y realmente
deliciosos, suaves, esponjosos y llenos de “melao” se encuentran en las
adyacencias de Caracas, en las vías hacia el Junquito y hacia Los Teques.
Los Golfeados
acompañados de un trocito de queso ‘e mano y café con leche son una delicia
inolvidable.

This last weekend was the official end of the summer,
everybody here in Minnesota crowded parks, swimming pools and beaches, yes
beaches did you know that Minnesota has more coastline than California,
Hawaii and Florida combined? And
that there is a boat for every 6 habitants?
Well that is enough useless facts for a day.
Today the weather was great, it was around 45° Fahrenheit,
and sunny, the leaves still on the trees, are turning yellow, orange and red,
and the kids are taking their jackets to school, you can still see some
sailboats in lake Calhoun, ignoring the fact that summer is over, holding on
to the fact that the wind is blowing and the sun is shining, equipped ones
with jackets and others just with windbreakers, avoiding splashes, and
mocking those that already placed their sailboats in their platforms waiting
for the ice to come.
Summer is dead, long live Fall.
Fall comes with it’s own set of rules and foods, goodbye
to those outside barbeques, and welcome to stews and baked goods.
Mmmm baked goods, that is Ana Maria’s specialties.

No, no crescents, but with the raw hardened
sugar cane pulp that we have let’s make SUGAR ROLLS
Venezuelan sugar rolls are a type of “bread” rolled as a
spiral, which without a doubt has become one of the most loved sweets in
Venezuela. You can find them on almost any bakery in the country, although
the most popular ones and certainly the sweetest, softer and overflowing with
“melao” (raw sugar syrup), are the ones found near Caracas, on the way to El
Junquito and Los Teques.
Sugar Roll served accompanied with a piece of soft fresh cheese and a coffee with
milk are unforgettably delicious.

GOLFEADOS
INGREDIENTES:
Masa:
· 2 Cucharadas de levadura seca
· 1 cucharada de azucar
· 1 Taza de agua tibia
· 4 cucharadas (colmadas) de leche en
polvo
· 1 cdta. de sal
· ½ taza de azúcar
· 4 Tazas de harina
· 2 huevos
· 50 grs. de mantequilla o manteca
derretida
Relleno:
· 50 grs. de mantequilla o manteca
· 3 Tazas de Papelón rallado
· 250 grs. de Queso blanco duro rallado
· Anís en grano al gusto
Melado:
· 1 Taza de Papelón al gusto
· 1 Taza de Agua
PREPARACIÓN:
1.
Si
no consigue leche en polvo, sustituya la taza de agua de la masa, por leche e
ignore la leche en polvo.
2.
Active
la levadura, mezclandola con ½ taza de leche tibia, 1 cucharada de harina
y 1 cucharada de azucar, deje
descansar por 10 minutos en un lugar tibio.
3.
Coloque
en un recipiente la levadura, sal y azúcar, añada el agua tibia, la leche en
polvo y la mantequilla, remueva y agregue poco a poco la harina, mezcle
formando una masa y agregue los huevos, amase en una superficie lisa hasta
que la masa esté muy suave.
4.
Enharine
la superficie para que la masa no se pegue, con un rodillo extiéndala
formando un rectangulo, hasta quedar fina. Luego unte la masa con mantequilla
y esparza el papelón y el queso rallado, añada anís en grano.
5.
Comience
a enrollar horizontalmente de la base del rectangulo, formando un rollo,
apriételo y corte círculos de unos 3 cm, colóquelos en una bandeja
enmantequillada y déjelos levar por espacio de una hora en un lugar cálido y
preferiblemente oscuro, lleve la horno a 350 ºF (180 °C) hasta que doren (más
o menos 20 min).
6.
Mientras
tanto, prerpare el melao, derritiendo la taza de papelon en la taza de agua y
hierva hasta que reduzca a consistencia de sirope.
7.
Una
vez dorados, retire del horno los golfeados y báñelos con el papelón
derretido, espolvoréelos con queso rayado y llevelos al horno unos 10 min
más, al sacar del horno bánnicelos ligeramente una vez más.

SUGAR ROLLS
INGREDIENTS:
Dough:
· 2 Tbsp. dry yeast
· 1 Tbsp. Sugar
· 1 C. warm Water
· 4 Tbsp. Powder milk
· 1 tsp. salt
· ½ C. sugar
· 4 C. flour
· 2 eggs
· 4 Tbsp. Melted butter
Relleno:
· 4 Tbsp. Butter
·
3 C.
Raw hardened sugar cane: Piloncillo
· 9 oz. Grated hard white cheese
· Anise to taste
Syrup:
·
1 C. Raw hardened sugar cane: Piloncillo
· 1 C. Water
PREPARATION:
1.
If
you do not find powder milk, just replace the cup of water in the dough for
milk and ignore the powder milk.
2.
Activate
the yeast, ina bowl, mix it with
½ cup of warm milk, 1 tablespoon of flour and 1 tablespooon of sugar, let it
rest for at least 10 minutes in a warm place.
3.
Place
in a bowl the yeast mix, salt and sugar, add the warm water the powder milk
and the butter mix and add slowly the flour, mix well to form the dough add
the eggs and keep kneading until it does not stick to your hands and its soft.
4.
Flour
the working surface so the dough does not stick, with a rolling pin roll the
dough and form a rectangle until about ¼” thick. Spread butter over the rolled dough and
sprinkle enough raw sugar and cheese to cover the dough add anise.
5.
Start
rolling from the base of the rectangle forming a roll, pressed to close it an
then proceed to slice circles of about 1 inch aproximately, placing them in a
buttered baking sheet, let them rest for about an hour in a warm dry place,
preferely dark, set your oven at 350 ºFarenheit (180 °C) and bake the rolls
until golden (20 minutes).
6.
Meanwhile
prepare the syrup, by boiling the raw sugar in a cup of water, over hi heat
and let it reduce until reach the desire syrup consitency.
7.
Once
they are golden take out the sugar rolls and pour the raw sugar syrope over
them and sprinkle with cheese, palce them in the oven again for about 10 min
more, once done glaze them again with the raw sugar syrope.
